OK now I'm just tootin' my own horn :) But I didn't come up with it, and actually I don't know the person I stole it from. I went to a big picnic, ate some, asked who made it, and harrassed the person until they told me. My gumption paid off.
BLACK BEAN, AVOCADO AND CORN DIP (YUM)
1 Red pepper, diced (dice all fresh produce into 1/4" pieces)
1 Red onion, diced
2 avocados, sliced into the bowl
Fresh cilantro, 2 tablespoons chopped
2 Limes, juiced
1 can Corn or 2 cups fresh
2 cans Black Beans (I prefer the Bush's variety), rinsed and drained
Sugar (or Splenda works too)
Combine all produce and canned items into a large bowl. Avocado does NOT need to be diced up because it will get mashed up as you mix. After avocado is added, squeeze juice of 2 limes on top of the mixture. Mix well with a wooden spoon until avocado is blended in. Add sugar, salt, and pepper to taste. It should be on the sweeter side, don't add too much salt because remember your chips will have salt on them.
I have also added a little bit of Tobasco to this and it has been good.
This is best on those Scoops chips! And be careful, people may be wary of the black beans at first but once they try some it will DISAPPEAR. Save some for yourself :)
